Double clicking on a ChemDraw structure pasted into a word processing application like MS Word, launches a graphics editor and not ChemDraw.

Make sure you are using the latest version of ChemDraw for Windows, which supports OLE. Versions of ChemDraw Windows prior to 4.0 do not support OLE, and thus do not provide the ability to edit structures from MS Word. If you are not using MS Word, and the word processing program you are using does not support OLE, then it is not possible to edit the structure from within your word processor using ChemDraw. You will need to copy and paste between applications.

It is also possible that the link between your word processor and ChemDraw has been lost. Try clicking once on the graphic, copy, switch to ChemDraw and paste. Make your edit, then copy and paste back into you word processor. Now see if double clicking works.

If you are not able to edit the structure after copying from your word processor and pasting into ChemDraw, then structure has lost its chemical significance. The only solution would be to redraw it.

When working with MS Office documents, keep a backup ChemDraw document with your structures in case you need to restore the information at some point.
